6 eggs 2 teaspoons of vanilla extract 1/4 cup of honey 1 teaspoon of cinnamon 1 teaspoon of nutmeg 1/4 of walnuts (for the topping) 1/2 teaspoon of baking powder
1. Preheat oven to 400
2. Sift coconut flour and spices together, and add baking powder.
3. Whisk remaining ingredients together, except walnuts, until well mixed.
4. Stir flour mixture into pumpkin puree.
5. Divide batter between 12 muffin cups, and sprinkle with walnuts.
6. Bake for 12 minutes or until toothpick inserted in center comes out clean.
